1 lb chicken breast tenderloins, sliced
3 cloves garlic
Cooking spray
Zest of 1 lemon
Juice of 2 lemons
1 cup frozen peas
1/3 cup whole wheat couscous
Large handful of italian parsely, roughly chopped
2 tbs poppy seeds
1 cup of chicken stock
Dash of white wine

Here is how you make Lemon Poppyseed Chicken with Spring Couscous:

Heat pan on med high heat. Spray with cooking spray. Brown chicken. Add finely sliced garlic cloves until lightly golden. Season with salt and pepper. Increase heat to high and splash with white wine, let it cook the alcohol off. Add lemon juice and stock, lower to med low heat and let simmer until sauce reduces.Meanwhile cook couscous according to package directions (you can use extra broth for cooking couscous for extra flavour) and add peas in while cooking.
