1/2 C. chopped onion
2 T. minced garlic
1/2 C. chicken broth
1/2 C. half and half
1 T. Oregano
2 T. fresh lemon juice

Here is how you make Mediteranean Chicken:

Heat Olive Oil in a large pan over medium heat. Season chicken well on both sides with Greek seasoning. Brown chicken on both sides in batches until light brown and no sign of pink. Remove to a warm plate. Add onion and garlic to the pan (add more olive oil if needed). Cook for 5 minutes or until soft. Add broth, half and half, lemon juice, and oregano. Transfer chicken pieces back to the pan. Cook chicken over medium-low heat until sauce is reduced and chicken is cooked thoroughly.
