How Do I Make Mediterranean Lemon Chicken?

Here is how you make Mediterranean Lemon Chicken:

Preheat oven to 425 degrees (F). In a 9x13 baking dish, grate the peel of half a lemon squeeze out the juice (about 1/4 c), and add the juice to the peel with the garlic and oregano, oil, salt and pepper. Stir until well mixed. Coat chicken with the lemon mixture, and lay chicken in the dish. Add diced potatoes to the pan. Cover and bake for 20 minutes. Turn and baste the chicken.Reduce heat to 400 degrees (F), and bake, uncovered, basting chicken every 10 minutes for about another 15-30 ,minutes (depending on the size of the breasts).
