3 lbs white meat chicken (cut into 6 pieces)
1 large onion, sliced
1 Tb chopped garlic
1 Tb chopped or grated ginger
1 cup chopped tomato
1 tsp ground coriander
salt and pepper
1 large bunch cilantro or parsley sprigs, tied together with string
two 3-inch cinnamon sticks
1 cup dried brown or green lentils, washed and picked over


How Do I Make Chicken and Lentils?

Here is how you make Chicken and Lentils:

Heat oil in a skillet on med. heat, and briefly cook onions, garlic, ginger, tomato, coriander and salt and pepper. Pour in 4 cups of water, and add the rest of the ingredients, except for chicken. Cover and simmer for 30 minutes, until lentils are almost done.Discard the herb bundle and cinnamon sticks and return the chicken to the pan. Cover and let simmer gently until the chicken is cooked through, another 10-20 minutes. If you want to be sure, make sure that thickest part of the chicken reads 155-165 on a thermometer.
