1/2 cup choped ONION (any variety will do, but i usually use yellow), 3 cloves of minced GARLIC, 1 cup LEMON JUICE (i always keep a bottle handy in the fridge... works great as substitute for vinegar in salad dressing too), and a dash of SEASONED SALT (not too much if you're watching your sodium intake)

1) Place the onion, garlic, and lemon juice in food processor until pulpy consistency then transfer to quart size ziploc bag (if you do not have a food processor, just place the ingredients in a large ziploc bag and mush up with your hands). 2) Sprinkle the chicken breasts with seasoned salt (use sparingly, especially if you are watching your sodium intake)3) Place chicken breasts in ziploc bag containing marinade and let sit in refridgerator for 30 minutes (can also be done the night before for the most flavor)4) Cook chicken using your prefered method: grill, grill pan, skillet, oven... until cooked through5) Serve over salad, or with basmati rice, or with couscous and plenty of grilled vegetables!
