• ½ teaspoon oregano
• ¼ cup flour, for coating
• 4 tablespoons olive oil
• 1 cup mushrooms, thinly sliced
• 1 small head garlic, minced
• 1 shallot, minced (or 1-2 scallions)
• ½ cup marsala wine, dry not sweet
• ¼ cup chicken stock
• Pasta (fettucini or angel hair)

1. Place chicken pieces between waxed paper and flatten to ½-¼ inch thick.2. Mix ¼ teaspoon oregano, ¼ teaspoon salt, ½ teaspoon pepper into ¼ cup flour. Drag chicken through mixture. Shake off surplus.3. Heat 3 tablespoons the oil in skillet and fry chicken in batches on medium heat for about 5 minutes each side, or until cooked through.4. Remove chicken from pan and cover with aluminum foil.5. Add 2 tablespoons oil and garlic to skillet and saute (do not brown) for a few minutes until soft.6. Add scallion to pan, stir for 1 minute. Do not brown.7. Add mushrooms and saute about 5 minutes.8. Pour Marsala wine into skillet along with chicken broth and remaining 1 tablespoons oil and boil until reduced by half. Add a flour and water mixture to thicken if necessary. The add freshly ground pepper and salt to taste (probably a bout ¼ teaspoon salt) plus a pinch of oregano.9. Replace chicken in pan to reheat on low. Cover in the sauce and mushrooms.10. Pour the chicken and sauce over the pasta.
