I LOVE chicken marsala. However, all that butter is really bad, so I took a recipe that used a lot of butter, replaced it with olive oil in order to reduce the calorie number from 845 (I also decreased the portion size by half or more-- depending it upon whether you split it into 4 or 6 servings). Place chicken pieces between waxed paper and flatten to ½-¼ inch thick.2. Mix ¼ teaspoon oregano, ¼ teaspoon salt, ½ teaspoon pepper into ¼ cup flour. Drag chicken through mixture.
