1/2 cup dry Old Fashioned Quaker Oatmeal
4 Tbsp Frank's Redhot Sauce (Save 1 Tbsp for top)
3 tbsp Kraft Ranch Salad Dressing
1/2 tso Salt
1/2 tsp Black Pepper
1/2 - 1 tsp Cayenne Pepper
1/2 c Mozzarella Cheese, part skim milk
1 lb. groundChicken Breast
1/2 Tbsp Ketchup, Heinz
1/2 Tbsp Honey


How Do I Make Buffalo Chicken Meatloaf?

Here is how you make Buffalo Chicken Meatloaf:

Preheat oven to 350 degrees.Cut bacon into 6 equal pieces and line botton of small corning ware casserole dish.Put EVOO into sautee pan, heat, and sautee onions and celery until soft. Add garlic & cook for about 30 seconds. Turn off heat. Stir in spinach until it wilts. Remove from heat and allow to cool. In large bowl, mix egg, oatmeal, 3 Tbsp redhot sauce, ranch dressing, salt, black pepper, cayenne pepper, & mozzarella cheese. Mix in the cooled veggies. Add the ground chicken and use hands to gently mix together. Transfer mixture into casserole dish covering bacon. Press lightly and push into corners.Stir together the remaining Tbsp redhot sauce, ketchup, & honey. Smooth glaze across top of meatloaf. Bake 45 minutes uncovered.
