Cook in skillet with Montreal Chicken seasoning until cooked through and starting to turn a little golden. Remove from pan. Add 1 tbsp oil and saute onions 3-4 mins. Add garlic and cook a minute. Add sliced mushrooms and cook until golden. Salt and pepper to taste. Add 1 tbsp oil and balsamic vinegar then add in tomatoes, sun-dried tomatoes, artichoke hearts and olives, parsley, oregano and basil. Stir for a few minutes. Add chicken back in and spinach. Cook 1-2 minutes to let spinach wilt.
