Spray frying pan with non-cooking spray.2. Cook chicken breast until done, you can either cube it, which makes it cook faster and leaves you with bite-size pieces, or for presentation purposes, leave it whole and put veggies on top!3. Add mushrooms, spinach, onions and olives to chicken, heat until onions are cooked but crisp. If you like, add 1/4 crumbled feta cheese, (adds 99 calories, 8g fat, 5g protein), and drizzle 1 TSP olive oil on top.I've also found this makes a great individual lunch for the freezer! I cook and cube the chicken, add the raw ingredients and put everything into a ziplock bag. Throw it in the freezer and take it out the night before.
