Rub 1 Tbsp. Olive oil on both sides of raw chicken breast, and place on foil lined baking pan (or, I use Copper coated baking pans or cookie sheets.) If the chicken breast are thick, then I butterfly the breasts. Add all dry seasonings to a small bowl and mix well, then sprinkle 1/2 the seasoning over top of chicken breasts (reserve other 1/2 for when you flip the breasts over.) Cover the pan with Foil, and crease center (like a tent) so it doesn't sit on top of the breasts. Poke 3 slits in top of foil to allow steam to escape.Place in oven and cook for 15 minutes. Remove and flip breast over with tongs & sprinkle remaining seasoning over the tops of the breast. Add 3 slices of onion on top of each breast and 1 TBSP. Cantina Style Salsa on top of the Onion. Replace the foil & Cook for an additional 15 minutes. Take chicken breast out, remove foil and discard. Add 1 Slice of Monterey Jack with Jalapeno Pepper Cheese to each breast, and top with 1 TBSP. cantina style salsa. Return to oven for an additional 5 minutes or until cheese is melted.
