2 Lb Boneless Skinless Chicken Breast
30 Oz Canned Black Beans
3 C Fat Free Sour Cream
2 C Reduced Fat Mexican Blend Cheese
8 Oz Diced Green Chilis
2 t Cumin Seed
1/2 t Freshly Ground Black Pepper
12 Corn Tortillas


How Do I Make Mexican Layered Chicken?

Here is how you make Mexican Layered Chicken:

Preheat oven to 350 degrees. Spray 13x9x2 baking dish with olive oil spray. Set aside. Place chicken in saucepan and cover with water. Bring to a boil and simmer 10-15 minutes or until cooked through. Remove chicken to plate and allow to cool. Cut chicken into 1 inch pieces. Place chicken in large bowl and add black beans, sour cream, 1 cup cheese, green chilis, cumin seed and black pepper. Mix well and set aside. Place 6 tortillas in bottom of prepared pan, overlapping to cover bottom. Spread half the chicken mixture over the tortillas. Place remaining 6 tortillas over the chicken mixture to form another layer and spread remaining chicken mixture on tortillas. Sprinkle with remaining 1 cup cheese and bake in preheated oven, uncovered, 30 minutes or until chicken mixture is thick and bubbly. Let cool 5 minutes before serving. Serve with salsa on the side.
