Add chicken to skillet and let cook for about 5 minutes, until brown.2. In medium bowl, mix tomatoes, olives, zucchini, bell pepper, cumin, and cinnamon; pour over chicken in skillet. 3. Heat to boiling; reduce heat. Cover and simmer for 15 to 20 minutes or until chicken is fully cooked. I served this over a small portion of brown rice (not included in nutritional value).
