It's not really moussaka, but I had chicken in the house and no lamb, so I made this as a trial. It's not bad!I've used this to make 6 servings, but these are pretty generous. You could make it serve 8 and reduce the calories from 350/serving to 260/serving.

Spray cooking oil
2lbs chicken breast, cut into chunks
2lbs eggplant
2 medium onions, chopped
2 cloves of garlic, crushed
1 can chopped tomatoes
1/4 cup tomato paste
1tbsp thyme
1tsp oregano
1/3 cup water
1 bay leaf

Cheese sauce:
1 1/4 milk (1%)
1/4 cup flour
1/4 cup reduced fat cheddar
1 cup fat free ricotta
4 tsp reduced fat parmesan


How Do I Make Chicken Moussaka?

Here is how you make Chicken Moussaka:

1. Cut eggplant into 1" slices.2. Spray pan with oil, add chicken and brown. Remove chicken from heat and set aside.3. Spray pan with oil again, add onion and garlic to soften.4. Push canned tomatoes through a sieve then remove solids.5. Return chicken to the pan with onions and garlic; add herbs, sieved tomato pulp, tomato paste, water, and bay leaf. Simmer for 20 minutes.6. Spray eggplant with oil and put on hot grill / under hot broiler until turning golden brown.7. Place a layer of eggplant at the bottom of a casserole/baking dish. Next add a layer of chicken, then eggplant etc. etc.8. Preheat oven to 350F (180C).9. Make the cheese sauce: blend a little milk with the flour in a pan to form a paste. 10. Over a low heat, gradually add remaining milk, stirring constantly, until the mixture starts to simmer and thicken.11. Remove from heat and add ricotta, parmesan and cheddar.12.
