Here is how you make Breaded chicken Mozzarella:

Pre heat oven to 425. I use a 13x9 pyrex dish and spray it with extra virgin olive oil. Take the whole breast and cut in half then cut in half fillet style. In a bowl whip the eggs as if making scrabbled eggs minus the milk. Take the four thin slices and coat with the egg. Put the crumbs in a bowl and coat the chicken. Place the chicken side by side in the dish and bake for about 25 minutes or just about done. add 1 or 2 ounces of the ragu to each breast topped with 1-2 of the cheese. return to oven for about 5 or so minutes or till cheese and sauce is heated and melted. lets stand to cool for a few moments and serve.Serves 4 Number of Servings: 4Recipe submitted by SparkPeople user BIGBOY_69.
