Spray 9"x9" baking dish with Pam. Spread spinach leaves in bottom and microwave 1 minute. Layer zucchini, 1/2 of the tomatoes, chicken thighs, remaining tomatoes over top of spinach in that order. Season chicken thighs with salt and pepper and add mozzarella over chicken, then sprinkle Parmesan over top.
