8 oz, Baby Bella Mushrooms
.5 cup chopped onions, raw
2 tbsp extra Vvirgin olive oil, divided
6 oz. Pinot Grigio
.75 cup Heavy Whipping Cream
2 oz Parmesan Cheese, grated, divided
1 stalk, large (11"-12" long) Celery, raw, sliced thin, with leaves
.33 cup Parsley, chopped
12 oz Fettucine


How Do I Make Chicken and Mushroom Fettucine?

Here is how you make Chicken and Mushroom Fettucine:

Cook pasta according to package directions. Reserve a cup and a half of pasta water for later use. Season chicken with salt and pepper to taste and brown in 1 oz of olive oil over medium high heat, flipping once, about 8 to 10 minutes or until cooked through. Remove from pan and set aside. Add remaining olive oil and cook onion and mushrooms over medium heat until golden brown, about 8 minutes. (If skillet browns too quickly, add a little pasta water.) Add wine, bring to a boil and reduce by half. Add cream, 1 oz. Parmesan cheese and 1 cup pasta water, stir to combine. Slice chicken, add to pan with pasta. Toss to coat, adding more pasta water if needed.
