Here is how you make Oregano Chicken with Mushrooms, Tomatoes, and Onions:

DO NOT REMOVE BONE AND SKIN UNTIL AFTER COOKING.Rinse and pat dry chicken.Mix 1/4 cup coconut oil, basil, and sea salt together.Rub mixture all over chicken inside and out.Place garlic cloves inside chicken cavity.Cook chicken on a roasting pan for 20 minutes at 425 degrees. Then, reduce heat to 350 degrees and cook until done (about 45 minutes).When there are only about 20 minutes left on the chicken, put 1/2 cup of coconut oil in a pan at medium high heat. Add onions. Once onions become translucent (the oil will bubble), drain out most of the oil and add in the mushrooms, cherry tomatoes, and white wine vinegar. Move chicken to serving dish and remove bone and skin if you prefer.
