Here is how you make Dijon Mustard Chicken:

Makes one breast with sauce.Preheat to medium low one non-stick frying pan; add olive oil. Mix flour with salt and pepper; lightly dredge breast through flour mixture, shaking off extra flour. Place breast in frying pan.Turn breast over after about 3 minutes, or when coating browns. Add shallots, mushrooms, and thyme to pan. Stir mushrooms and shallots occasionally, carefully watching chicken breast.Just before the chicken breast is done, add the garlic. Remove breast and cover; deglaze pan with white wine.
