Place chicken carcass in a large, heavy pot with lid, such as a stewing pot. (You may need to break the carcass into pieces to fit it in the pot.) Cover with cold water. Bring water to a boil. Boil for 30 minutes, then reduce heat. Simmer for 3 to 4 hours. Turn fire off and let cool. Strain the broth and debone the chicken. Place the separated meat back into the pot with the strained broth and other prepared broth.. Add spices and bring to boil. Add frozen noodles and cook until noodles are done--approx.
