5 spring onions, chopped
1 stem lemongrass, finely chopped
3 cloves garlic, crushed

180ml chicken stock
3 tbsp soy sauce
zest of 1 x lime
1/4 tsp dried chilli flakes
fresh coriander, chopped
200g uncooked egg noodles (unenriched)

1. Chop chicken into bite size pieces and then Marinate chicken in the garlic and ginger puree for about 1 hour.2. Cook noodles as directed on the packet, drain.3. Spray pan with 1cal cooking spray.4. Cook chiken until golden brown, approx 5 mins.5. Add spring onion and lemongrass, sir fry for 2 mins6. Add stock, soy sauce, zest and chilli flakes.7.
