Spray cookie sheet with no stick spray. Mix bread crumbs, parm cheese and salt and pepper into a bowl. I also added garlic powder for flavor.Cut up chicken into 1" pieces, and shake in 1 tbsp of olive oil. Add a few pieces at a time to cover in the dry mix and place on cookie sheet.Bake 10 min on one side, and flip, and continue baking for 10 min on other side.
