4 boneless chicken breast halves
1/2 tsp of salt
1/2 tsp of pepper
2 tsp of herbes de Provence
2 tbls olive oil
2 shallots
1/2 cup green olives (2.5 ounces)
1/2 cup of brine-cured pitted olives such as kalamata
1 cup chicken broth
1 lemon zest and lemon juice (3 tbl)
1/2 tsp cumin
2 tbl fresh parsley
2 tbl butter



How Do I Make Chicken and Olives?

Here is how you make Chicken and Olives:

Sprinkle sides of chicken with half of salt, pepper, and cayenne. Turn breast over and sprinkle other side with herbes de Provence and remaining half salt, pepper and cayenne. Turn again and rest for 10 minutes.Heat oil in a large lidded skillet over high heat. Put chicken in hot oil. Reduce heat to medium high and cook chicken for about 5 minutes. Turn chicken over and cook until just browned, about two minutes more. Transfer to a plate.Reduce heat to medium. Cook shallots in hot skillet, stirring until just softening and golden brown, about 2 minutes. Add green and black olives and cook stirring until fragrant, about 30 sec.Add broth and bring to a boil stirring and scrapping up brown bits from bottom of skillet with a wooden spoon. Add lemon zest and juice, 2 tbls of reserved olive brine, and cumin. Increase the heat to high and cook, stirring, until sauce is reduced by half,2-3 minutes.Reduce heat to low and return chicken to skillet. Cover skillet and cook chicken until no longer pink in center an juices run clear, about 5 minutes.Transfer chicken to serving plates. Remove skillet from heat. Add parsley and butte.
