Here is how you make Onion Chicken:

Heat the butter in a skillet over medium heat. Add in the onions and cook, stirring frequently. Add the salt, pepper, thyme, and garlic. As needed, add in small amounts of stock to keep the onions from burning as they caramelize. Cook until onions are very tender and caramelized (about 20-30 minutes). While the onions are cooking, spray a 9X13 baking dish with non-stick spray. Layer the chicken evenly in the pan.Back to the onions: Sprinkle the flour over the onion mixture and stir until combined. Add in the rest of the stock and bring to a simmer. Pour the onion mixture over the chicken.Layer the cheese over the chicken/onion mixture.
