The peel of 1 large naval orange - dried for 3 days
3 boneless skinless chicken breasts
? bag of frozen broccoli (or fresh)

Chicken marinade:
? cup orange juice
1 tbsp dark soy
1 tbsp honey

For
2 ? tbsp honey
12 dried Thai chilies
2 tbsp peanut oil
1 tbsp sugar
? tsp salt
2 tbsp dark soy
1 ? cup orange juice
? tsp ground ginger
2 tsp cornstarch
(can be replaced with whole wheat flour - if so mix flour smoothly with water put flour and cold water in a jar, place the lid on and the give the jar a vigorous shake)



How Do I Make Healthier Orange Peel Chicken?

Here is how you make Healthier Orange Peel Chicken:

1. Three days before, peel a large naval orange and set the peel on a paper towel to dry for about three days. It needs to be hard and just slightly brown.2. When the orange peel has dried, start the recipe by cutting off all the fat from the chicken. Then cut each breast into thin 1 ? inch strips and place them in a plastic zip lock bag. 3.Mix together all of the ingredients for the marinade. Then add that mixture to the chicken and leave it in the refrigerator for at least 30 minutes to marinate.4. While the chicken is marinating, cut the orange peel into thin 1 ? inch long strips and slowly mix these strips together with 1 ? tablespoons of honey, making sure each strip is coated. Then set them aside.5. Microwave the ? bag of frozen broccoli for about 5 minutes or until thoroughly cooked and set aside. ( you can use fresh broccoli if desired) 6. Heat 1 tablespoon of peanut oil on high. Get oil very hot and add chilies and orange peel. Cook while stirring until they turn black. Don't be concerned when they smoke and burn, that is what you want. The chilies will turn black first, but continue to cook them until the orange peel turns black as well. This takes about 10 to 12 minutes.7. Once blackened, remove the chilies and orange peel and set them aside. Do not clean out the pan. The debris stuck on the bottom of the pan will add flavor to the rest of this dish.8. When the chicken has finished marinating, drain all of the liquid from the chicken. 9.Heat the remaining tablespoon of peanut oil on high in the same pan that was used for the orange peel. Add the chicken, cook until all the liquid has evaporated and the chicken browns. About 10 minutes.10. While the chicken is cooking, in a small bowl mix together 1 tablespoon of sugar, ? teaspoon of salt, 2 tablespoons of dark soy, 1 ? cups of orange juice, the remaining tablespoon of honey, and ? teaspoon of ground ginger.11. Once the chicken is browned, add the sauce mixture, broccoli, chilies and orange peel. Stir until boiling.12. In a small cup mix the cornstarch (or whole wheat flour) with a little warm water just to dissolve. Add this mixture to the pan and stir until thick, about 3 minutes.13. Serve over brown rice.
