This is a recipe from my crockpot book. It's for a small crockpot (1.5-3 quarts). You can replace soy sauce with low-sodium soy sauce, or dry sherry with rice wine (mirin). You can also use tangerine zest instead of orange zest or dark brown sugar instead of light brown sugar.

4 boneless, skinless chicken thighs
1/4 cup regular soy sauce
2 tablespoons dry sherry
1 tablespoon light brown sugar
1 clove garlic, crushed
Grated zest of 1 small orange
One 1-inch piece of fresh ginger, peeled and thinly sliced


How Do I Make Orange Teriyaki Chicken?

Here is how you make Orange Teriyaki Chicken:

Spray inside of crock with Pam. Heat a skillet over medium-high heat and add chicken in a single layer with smooth side (formerly skin side) down. Cook 2-3 minutes, to form a nice browned surface. Turn over and brown the other side. Put chicken in crockpot smooth side up. Return skillet to stove, turn heat to medium, and add soy sauce, sherry, brown sugar, and garlic. Stir to heat and disolve the brown sugar. Immediately pour the mixture over the chicken in the crock. Add est and ginger slices on top. Cook on HIGH for 2.5-3hrs. Serve hot.
