This is a very easy recipe that has become a family favorite!Grill your boneless, skinless chicken breasts (can be done in advance) until thoroughly cooked and no longer pink.Saute Onion in a small amount of Olive Oil or oil spray until transparent and soft. Add all other vegetables and saute until warm. Add canned diced tomatoes, tomato paste, and parmesan cheese. Simmer, covered until vegetables have softened. Approximately 20 minutes. Give a good stir occasionally while simmering.Cook Pasta according to package directions until al dente.Place measured amount of pasta on plate, cover with 1c. sauce and finish with sliced grilled chicken breast.
