About 16 oz of cubed, cooked chicken
10 oz dry, whole wheat pasta
2 tbsp butter, salted
1/2 c. chopped, white onion
2 cloves of garlic, smashed and minced
4 oz cream cheese (I use regular, but it's purely choice)
1 c. whole milk
1 c. sour cream
2 c. Kroger brand Pizza cheese, shredded
1/2 c. Kraft Parmesan, Asiago, Romano cheese, shredded
1/2 tsp salt
1/2 tsp pepper, black
1 pkg spinach, frozen
1 can Hunts Diced Tomatoes (Basil, Garlic, Oregano)


How Do I Make Chicken and Spinach Pasta Bake?

Here is how you make Chicken and Spinach Pasta Bake:

1. Preheat oven to 400 degrees.2. Coat a medium casserole dish with non-stick spray. (I used a 9x13.)3. Cook pasta in salted, boiling water to al dente. Drain and set aside.4. While pasta is cooking, heat butter in a medium saute pan set to medium heat. Add in the onion and garlic. Cook for 3 - 4 minutes to slightly soften veggies. Do not brown.5. Also, while pasta is cooking, if you are using frozen spinach instead of fresh, now is the time to cook it. Cook it to about 3/4 the way done.6. Add cream cheese to onion mixture and stir to melt. Reduce heat to low. Stir in sour cream, milk, Parmesan cheese, 1 cup of the pizza cheese, salt, and black pepper. Stir until everything is well-combined and melted. Turn off heat.7.Combine the pasta, chicken, spinach and tomatoes in a large bowl.8. Add in the sauce and gently stir to coat.9. Pour into the prepared baking dish. (I drizzled in a little more milk over the mixture once it was in the baking dish because it looked a little dry to me.)10. Top with the remaining pizza cheese.11.
