Cover and cook. When chicken is cooked through, remove and cut up into bite size pieces. Add the rest of the 'hard' veggies to saute pan and cover and cook for 5-7 minutes. Except for the tomatoes add the rest of the veggies to cook for an additional 5 minutes. Toss the cooked veggies, tomatoes, pasta, and chicken in a large serving bowl and add vinaigrette to taste. Serve with a little parmesan cheese if desired.Makes 6-8 servings.
