pasta (bow tie, rotini, or penne work the best)

Here is how you make Michelle's Chicken with Pasta:

Saute the chicken, onions, mushrooms, and zucchini with olive oil (or you can saute each separately since the chicken can make the mixture watery) on med- to med-low heat. Add olive oil as needed in 2 Tbsp increments to prevent sticking to bottom of pan. Cook the pasta as directed on box.When chicken is almost done, add the garlic and sesame seeds, then add the spinach (I like to shred it up with my fingers and take off the stems.) Add the remaining amount of olive oil and warm up. The spinach should be a little wilted when it is done. Be careful not to burn or evaporate all of the olive oil- it is "sauce" for the pasta.Drain the pasta and add back to pot. Transfer all of the ingredients from the chicken mixture to the pasta and mix. You can heat it up a little bit more if needed.You can also add shredded cheese to the top for added flavor.This makes about 8, 2-cup servings.
