1 Tbsp extra-virgin olive oil
4 Chicken sausage links, chopped into smaller than bite-sized pieces
4 cloves garlic, chopped
1 med onion, finely chopped
1 bay leaf, fresh or dried
4 or 5 sage leaves or about 1 Tbsp ground
1/2 cup or so of dry white wine (if you use non-alcoholic it will be about 1/4 of the calories)
1 cup fat free chicken broth
1 cup canned pumpkin
1/2 cup milk
1/8 tsp ground cinnamon
1/2 tsp ground nutmeg
salt and pepper
8 oz penne pasta (four 2 oz servings)
Parmigiano for grating


How Do I Make Pumpkin and Chicken Sausage Pasta?

Here is how you make Pumpkin and Chicken Sausage Pasta:

Heat about half of the oil in a large skillet on medium heat. Brown the sausage. Remove the sausage, placing it on a paper towel to drain the oil. Add the remaining oil to the pan with the garlic and onion. Saute until onion is tender. Add the bay leaf, sage and wine to the pan. Let the wine reduce to about half (about 2 minutes). Add chicken broth and pumpkin, stirring until it comes to a bubble. Return the sausage to the pan and reduce heat. Stir in milk. Season with cinnamon and nutmeg, then salt and pepper to taste. Simmer 5-10 minutes until sauce thickens. Serve over pasta and grate Parmesiano over each serving. Serve with a good fresh spinach salad.
