1 sm. onion, chopped
1 cup chopped leftover grilled veggies (zuchini, red peppers, eggplant, etc.), diced
1 can fire roasted diced tomatoes
1 sm. jar Trader Joe's Marinara Sauce
1 can Bush's canneloni beans, drained & rinsed
1/2 cup red wine or chicken stock
2 oz. good chevre, crumbled
2 oz. shredded mozzarella
1 oz. grated parmasean or provolone
1 T. dried basil
Handful chopped Italian parsley
Salt & pepper

Here is how you make Quick Grilled Chicken and Veggie Pasta:

Saute onion in oil and oil spray until they begin to brown. Add tomatoes & sauce. Stir then add veggies, beans, wine & basil. Bring to a boil. Reduce heat to simmer and add chicken & chevre. Cook, covered for 5 minutes. Turn off heat and add parsley. Let sit while pasta cooks (10 minutes)Drain pasta and top with sauce. Combine well and top with mozzarella and parmasean.
