Here is how you make Peanut Curry Chicken #1:

Puree garlic, peanut butter, spices and tomatoes in a food processor. Set aside.Sear chicken tenders in 1/2 Tbsp. olive oil. Set aside to rest.Saute peppers and onion in remaining olive oil until tender and just beginning to brown. Add puree and cook an additional 2 - 3 minutes. Add V-8 juice. Stir to blend and cook another 2 minutes. Slice chicken tenders into 1/2" pieces. Add to sauce.
