1lb boneless skinless chicken breast
2 1/2 large red bell peppers (can use 2, I used 2 1/2 because I needed to use the 1/2 before it got yucky) chopped finely
1 small yellow onion, finely chopped
2 teaspoons bottled minced garlic
1 tsp kosher salt
1/2 tsp dried basil
1/4 tsp ancho chili pepper
1/4 tsp New Mexico chili pepper
(For the chili pepper use total 1/2 tsp of your favorite spicy pepper...I've seen black pepper substituted)



How Do I Make Red Pepper Chicken?

Here is how you make Red Pepper Chicken:

Spray a large deep skillet with cooking spray and heat on medium heat. Lightly brown the chicken breasts on both sides. Pour the chilis (with their juice) on top. Add peppers, onions and garlic. Add salt, chili pepper and basil and stir to combine taking care to fully coat both sides of the chicken breast with the other ingredients. Cover and simmer on low until chicken breasts are cooked through (approximately 1/2 hour) Remove chicken from skillet and slice into long thin slices. Pour all other ingredients (carefully) into a blender or food process. Open the steam vent and cover tightly with a towel to allow steam to escape as needed. Pulse until thick sauce is formed (5 or 6 pulses). Pour sauce back into pan and add sour cream, stirring to combine. Add chicken and heat until all ingredients are heated through.
