I do this by putting them straight onto the naked flame of a gas hob - but they can put under the grill. When they are blackened and blistered, wrap in a cloth or plastic bag and leave until cool enough to handle. Scrape off most of the skin, then cut into halves or quarters lenthwise, and remove the membrane and seeds. Alternatively, cheat, and open a jar of roasted peppers and rinse well! The paprika will thicken the sauce slightly. Check the seasoning and add more chilli or paprika if needed. Check there is enough liquid for four chicken breasts, adding more water if needed.Add the chicken breasts, either whole or cut into thick slices, to the pan and spoon the sauce over. Top with the roasted pepper pieces. Cover and simmer gently until the chicken is just cooked through. (10 minutes for slices - up to 20 minutes for whole breasts).Serve one breast and one red pepper per person and share out the paprika sauce.
