The ingredients for Chicken w/Yellow Peppers and Portobella Mushrooms are:

2-4 Tbsp. Olive Oil
1/2 cup Seasoned Flour
1 lb boneless, skinless chicken breasts, cut into pieces
1 yellow bell pepper, sliced
1 pkg. sliced portobella mushrooms
1 shallot, minced (about 2 Tbsp.)
1 cup chicken stock or broth
Fresh cilantro
Salt & Pepper to taste


How Do I Make Chicken w/Yellow Peppers and Portobella Mushrooms?

Here is how you make Chicken w/Yellow Peppers and Portobella Mushrooms:

Shake the chicken in the flour in a zip-lock bag to lightly coat. Heat 2 Tbsp. olive oil in large skillet and brown the chicken on all sides. Remove from heat (chicken is NOT fully cooked), add more oil if needed and saute the shallots, peppers and mushrooms until limp. Add flour from the zip lock bag and cook for a minute or two, mixing with vegetables. Add chicken broth and stir. Add chicken, salt & pepper and cilantro to taste. Cover and simmer for 20 minutes.
