Hominy, 2 cans (one white & one yellow)
*Tomatoes, diced no salt added, 1 can undrained
*Canned Chicken, 2 cup (2 cans), shredded
Hot pepper sauce (optional)
1-2 Limes, cut into wedges
2 T. fresh chopped Cilantro, optional


How Do I Make Hominy with Shredded Chicken and Peppers?

Here is how you make Hominy with Shredded Chicken and Peppers:

Heat oil in large skillet over medium-high heat. Add onion, peppers, carrot, and salt. Cook stirring frequently, for 3 minutes. Add garlic, oregano, and cumin, and cook a few minutes longer, until onion is lightly browned and peppers softening.Stir in hominy and tomatoes (with juice) and bring to a boil. Lower heat slightly and contineu cooking, stiring frequently, until flavors meld and some of liquid has evaporated, 2-5 minutes. Stir in the chicken and cook until heated thru. Season to taste with hot sauce (if using) and salt & pepper if needed. Ladle into bowls, garnish with cilantro (if using). Serve with a lime wedge for a last minute squirt.Note: Original recipe calls for fresh cooked chicken shredded, or a rotisserie chicken shredded.
