* Poultry seasoning, 1 tsp
* Cider Vinegar, 1 tbsp

Here is how you make Peppers and chicken:

in a small pan, heat oil. Add pepper and onion strips and cook for 2 - 3 minutes, adding in dash of salt and pepper.Pour in Chicken stock - enough to not-quite cover the veggies. Cover pan and cook on a simmer until the veggies get bright and start to soften.Pour off the chicken stock and add chicken to pan, turn flame on to medium.Add in all spices, to taste, and cook for 10 min. Add in cider vinegar , stir and cover for 5 min. Check to be sure it doesn't burn, but you do want some browning.Uncover and finish cooking until chicken juices run clear and veggies and chicken have some crispy brown bits.Serve with brown rice.(You could use a little white wine instead of the cider vinegar, but adding more like a tbsp, or even deglaze the pan for a pan sauce with white wine if you want to.)Number of Servings: 2Recipe submitted by SparkPeople user HEDDAROSA.
