Spiralize the zucchini and set aside. Chop all other veggies. In a large frying pan saute the garlic, peppers, onion, mushrooms, until all are tender. Add the chicken and pesto, stir and heat through on low heat. Keep covered while you cook the spiralized zucchini. In a medium saucepan, heat 8 cups of water to a boil (or enough water to cover the zucchini). Add the zucchini and let cook for 2 minutes on high. Drain, and add to the pesto mixture. Stir gently.
