1 tbsp pesto
1 tbsp tomato paste
2-3 oz chicken broth
Garlic, 1 clove chopped
Onion, 1/4 med. chopped
Rosemary, 1 tsp
Salt & Pepper-- ~ tsp each
Green beans, 1 cup
Brown rice, 1 cup
1 tbsp olive oil


How Do I Make Skillet Pesto Chicken?

Here is how you make Skillet Pesto Chicken:

Slice chicken, chop onion and garlic and slice green beans into 1/2 inch long pieces.Start cooking brown rice prior to starting chicken cooking. Heat oil in skillet, sautee onion, garlic for 2-3 minutes over medium heat. Add chicken and brown for 3-4 minutes. Add seasonings and tomato paste and pesto with chicken broth. Stir for 3-4 minutes until chicken becomes tender. Add green beans and cover, turning down the heat to medium-low. Cook for ~5 minutes until beans are tender. Serve over brown rice.
