2-3 cloves garlic, minced
2 medium peppers, any color
2 carrots, diced
1 can (15 oz) no-salt tomato sauce
1 cup dry white wine
1.5 tsp dry oregano
1 tsp dry thyme
3-4 medium potatoes w/ skin, diced
1 large sweet potato w/ skin, diced
.5 cup pimento-stuffed olives, sliced
.5 cup golden raisins
1 cup frozen peas, thawed
slivered almonds, optional

Here is how you make Chicken Picadillo:

Place chicken in a large (4-5 qrt) greased casserole and set aside. Cook onion, garlic, bell peppers, and carrots in a skillet over medium-high heat until onion is soft, stirring occassionally. Add tomato sauce, wine, oregano, and thyme; cook stirring occasionally until sauce boils. Boil gently uncovered 5 minutes. Pour sauce over chicken. Add potatoes, olives, and raisins. Bake in 375 degree oven until potatoes are tender, about 1.25 to 1.5 hours. Stir in peas.
