freshly ground black pepper to taste
2 large egg whites
2/3 cup seasoned whole wheat dry bread crumbs
olive oil spray (about 1 Tbsp)
1 Tbsp butter
juice of 1 lemon, lemon halves reserved
1/4 cup dry white wine
1/2 cup fat free chicken broth
1 Tbsp capers
Sliced lemon for serving
Chopped fresh parsley leaves, for serving


How Do I Make Chicken Piccata (sort of)?

Here is how you make Chicken Piccata (sort of):

Place chicken breasts between two pieces of parchment or plastic wrap and pound out to 1/4" thick. Sprinkle both sides with salt and pepper. In a shallow plate or bowl, beat the egg whites. Place the bread crumbs in another plate. Dip each chicken breast in the egg, and then bread crumbs (both sides). Heat a large saute pan over medium heat. Spray pan with cooking spray. Spray olive oil spray on one side of each breast and place them in the pan, oil side down. Spray the top side of the chicken with more olive oil spray and cook for 3-5 minutes (cooking times may vary) on each side until golden brown and cooked through. Remove chicken from pan and set aside.For the sauce, clean the saute pan. Over medium heat, melt the butter, add the lemon juice, white wine, chicken broth and lemon halves, and salt and pepper to taste. Bring mixture to a boil and continue to boil until mixture is reduced in half (3 to 5 minutes). When mixture is reduced, reduce heat to simmer, place chicken breasts back in pan with mixture to warm. Add capers and serve by placing the chicken breast on the plate or over pasta and drizzling sauce over the chicken breast.
