4 chicken breasts, about 5 oz each, pounded flat
1/4 cup whole wheat flour
1/4 tsp salt
1/4 tsp pepper
1 tbsp olive oil
1 tbsp butter
1/2 cup chicken broth
1/2 cup white wine
2 tbsp capers
1 tbsp chopped fresh parsley
1 whole lemon, thinly sliced
1 lemon, juiced (about 1/4 cup)
2 closes garlic, minced


How Do I Make Jeff's Chicken Piccata?

Here is how you make Jeff's Chicken Piccata:

Mix flour, salt, and pepper. dredge chicken in flour mixture. Heat oil in a large skillet. When the oil is hot, add chicken and cook through, until outside is golden, about 5 minutes per side. Remove chicken from pan and drain any remaining oil. return pan to medium heat and add garlic, lemon slices and capers. Cook, stirring as needed, about 2 minutes over high heat. Add chicken stock and lemon juice and deglaze the pan. Add parsley. Return chicken to the pan and simmer on low heat until sauce is reduced by about half. Add butter and mix into sauce. Serve.
