This is a great recipe. If have two children who do not like the lemon. I don't add a few pieces to the gravy and they eat it that way. Recently I didn't have any lemon so I left that out and my husband and one daughter loved it. They actually thought it was better. I like the lemon flavor. I also use fat free chicken broth. Use fresh or jar parsley, I have used them both. I also buy one package of chicken breasts, which usually weighs a pound. (give or take). This is a great recipe for a party. I have made this many times and put into a large tray and served at parties. Everyone loves it! I aso like to use one Eggland Bests Eggs. They are very good for you. Beat Egg with one tablespoon of water!

Lemon Juice, 1/4 cup
Parsley, 1/4 cup chopped Italian or 1tbsp jar
Unbleached all-purpose flour, 2 tbsp
Swanson 100% Fat Free-No MSG Chicken Broth 1 1/2 cups or one can!

Coat chicken breasts with egg mixture. Coat with bread crumb mixture on both sides.In large skillet, add Olive Oil (MUFA)Brown Chicken on both sides in Oil.Add Chicken broth when done and simmer for 15 minutes covered.(while that is simmering add lemon juice w/flour) Add Lemon mixture to gravy. Add all over to smoothen out the mixture. The flour mixture can get lumpy. Add parsley.Serve over white rice or pasta. Serve with Brocolli or asparagus. Cook this while Chicken is simmering.
