500g chicken breasts
2 tsp cornflour
1 tbsp olive oil
4 leeks sliced
2 tbsp chopped parsley
2 tbsp yogurt
1 tbsp wholegrain mustard

Here is how you make Chicken and Leek Pot Pie:

1-Turn oven to 180C or Gas mark 6. Chop the parsnips and potatoes into chunks and boil for about 15mins until soft. Drain-reserving the potatoe water-then mash.2- Toss the chicken in the cornflour. Heat the oil in a large pan, add the sliced leeks and fry until they start to soften. Add the chicken and 200ml of the reserved potatoe water. Allow to boil, then cover and simmer for 10 mins. 3-Remove from the heat and add the parsley, yogurt and mustard. 4-Spoon chicken into a pie dish.
