2 T. butter
1/2 c. chopped onion
1/4 c. flour
2 c. chicken broth
Dash of salt
Fresh pepper to taste
1/2 c. chopped celery
1 c. frozen peas and carrots
1 c. mushrooms, sliced
3 c. cubed cooked chicken (4 breasts, no skin)
Squeeze of lemon juice
Tabasco to taste
2 medium potatoes, boiled and thinly sliced
2 T. grated Parmesan cheese
Paprika


How Do I Make Chicken One-Pot Pie?

Here is how you make Chicken One-Pot Pie:

Melt butter in large oven proof pan. Saute onion in butter until translucent.Add flour, blend well. Gradually add chicken broth; stir over low heat until thick and smooth.Add celery and mushrooms; cook about 10 minutes.Add all remaining ingredients, except the potatoes, cheese and paprika.Heat through over low heat.Top with 1 layer of sliced potatoes. Bake in preheated oven (425 degrees) for 20 - 30 minutes.Sprinkle with Parmesan cheese and paprika and return to oven for a few minutes until cheese melts.Makes 4 large servings (about 1.5 cups each)Number of Servings: 4Recipe submitted by SparkPeople user TERRI139.
