I had some boneless skinless chicken breasts in my freezer, and some frozen mashed potatoes. Looking for something to fix with what I had on hand and came up with this version of shepherds pie. It could me created with less fat and sodium, by substituting low-fat, low sodium versions of cheese, soup, etc., but this was what I created with what I had on hand.

chicken breast, no skin or bone, 1.5 breasts (or 6-8 tenderloins)
carrots, 2 cups sliced
celery, 2 stalks, diced
thyme, ground 1 teaspoon
onion powder, 1 teaspoon
yellow sweet corn, frozen, 1 cup kernals, thawed (or leftover)
cream of mushroom soup, 1 can (10.75 oz)
mashed potatoes, 3 cups (use leftover, cook fresh, or Schwans frozen mashed potato nuggets, 45 nuggets)
American cheese, 6 slices (3/4 oz)

Here is how you make Chicken Shepherd's Pie (about 5 servings):

Place frozen chicken in pot and cover with water. Add the thyme and onion powder. Bring to a boil, then cover and simmer x 10 minutes. Add the cut up carrots and celery. Simmer 10 minutes more. Remove Chicken. Cut chicken into bite sized pieces. Stir together the chicken, corn, carrots, celery, can of soup, and 1/2 cup of the chicken stock. Place in casserole dish coated with nonstick cooking spray. Meanwhile, heat the mashed potatoes, and spread on the top. Then, cut the cheese into strips and make an easy criss-cross on the top. Place in the oven at 400 degrees for 20 minutes, until pie is bubbly, and the cheese has just started to brown.
