* Chicken Breast, no skin, 1 unit (yield from 1 lb ready-to-cook

* Pepper, black, 1 dash


How Do I Make Easy Low Fat Chicken Pot Pie?

Here is how you make Easy Low Fat Chicken Pot Pie:

Stir the flours together in a small bowl & freeze for one hr. Freeze the oil in a separate container for an hr also.Remove both from freezer & mix the oil into the flour until it makes a crumbly dough. Stir the salt into the ice water & mix the water into the dough.(Important: Mix only enough to bind the dough.) If it's too dry, add more water, a little at at time.Press half of the pie crust into a 9" pie pan.In a pot, mix together cream of chicken soup, milk, salt, pepper, and diced chicken. Bring to a boil and cook for appx 10 minutes or until the chicken is fully cooked. Add the peas and carrots and cook for an additional few minutes.Preheat the over to 350oC.Pour the pie filling onto the pie crust. The filling should be a little below the rim of the crust (the middle can be a bit higher if you want). The remainder of the pie crust needs to be pressed into a flat circle (this will make the top of the pie crust). Place this layer of dough on top of the pie so that the ends match the ends of the crust. Use the ends of the tines of a fork to press together the two layers of the pie crust. Cut five evenly spaced slits in the crust to allow the pie to vent. Bake for appx 35 minutes. The crust should be golden brown.
