1 lb Chicken Breast
2-2 1/2 cups water (enough to cover chicken)
5 oz of evaporated milk
1 chicken boullion cube
1/4 c. onions
1 tbsp olive oil
2 tbsp of flour
cooking spray
2 cps frozen mixed vegtables (i used green giant corn, carrots, peas and beans mix)
1 package reduced fat crescent rolls

Here is how you make Jen's Homeade Chicken Pot Pie:

boil chicken in water with boullion cube (aprox 10-15 min) until done. while chicken is cooking, cook vegetables in a saucepan, and brown onions with olive oil in a seperate skillet. once chicken is done reserve 1 c of the broth to use later. once onions are done, add flour and cook on low heat for 2 min. add in chicken broth and evap milk, stir until thickened (turning the heat up slightly will make it thicken a little quicker). once thickened add in chicken and vegetables.spray pie plate with cooking spray, pour in chicken mixture and spread cresecen rolls on top, spray lightly with cooking spray. bake at 400 deg for 10 min, then turn down to 350 deg and cook an additional 20 min or until rolls are browned (cook uncovered). makes 8 servingsNumber of Servings: 8Recipe submitted by SparkPeople user JENAH77.
