How Do I Make Lindsay's Chicken Pot Pie?

Here is how you make Lindsay's Chicken Pot Pie:

Serving Size - approx. 1.5 cupsSeason chicken - I used salt, pepper, and Nature's seasoning. Boil chicken until tender. Shred meat with a fork. [If you don't want to do this, you can pan sear and chop to cut down on time.] Save the "broth" for later.*3 breasts was approx 10 ounces after shredding.Place shredded chicken in a large ziploc baggie. Finely chop the rosemary, garlic, and shallots and add to the chicken. Add carrots [I bought the matchstick carrots - and grabbed a large handful - about 1 cup], broccoli florets [cut small], potatoes [cut into small pieces], and peas. Add the 2 cans of soup and .5 cup of the broth. Seal baggie & mix well. *I made the baggie mixture in the morning and put in the fridge to use later that night.For topping: Combine the crescent rolls into one fluid piece of dough. Stretch out thin. [Set aside]Preheat oven to 350. Place mixture in a baking dish. [If it seems to thick, add some more of the leftover broth & mix well. Bake for 30-40 minutes [until bubbly and slightly browning on top]. Place the crescent roll piece over the top of the already cooking dish. Bake an additional 15-20 minutes until golden brown.Notes: Calories will change slightly depending on how much of the leftover broth is needed.
