1. Cut chicken into bite sized pieces and saute until mostly cooked through. (I also sometimes add onion to the pan first for flavor, but remember to account for it if you're extremely strict with your diet.)2. While that's cooking, mix the condensed soup with the lactaid (or milk of choice, remember to acct!)3. Add frozen vegetables to the pan with the chicken.4. Pour soup mixture over the chicken and vegetables.5. Let simmer for a few (about 20 minutes) while bringing pie crust to room temperature. (Just leave the pie crusts in the boxes on the counter for the 20 minutes while the chicken mixture is cooking.)6. Line pie plates with bottom crusts and place half of the chicken mixture into this...top with another crust. Do the same for the other pie plate.7.
